Overview

A Taste of Morocco: Cook, Learn & Share

Moroccan cooking is a patient art of spice and slow heat. In this class you learn it by doing: choosing vegetables and herbs, mixing ras el hanout, layering a tagine so everything cooks at the right speed, and preparing the small cooked salads that begin every Moroccan meal.

Guided by a local cook, you prepare a full menu, usually a tagine or couscous with two or three salads, and learn how mint tea is made and poured. Then you sit down together to eat what you cooked. You go home with the recipes and, more usefully, the techniques behind them.

Start

Shopping at a local market

You meet your cook and visit the stalls together to choose vegetables, herbs, meat and spices for the dishes of the day.

Shopping with a cook is the best introduction to Moroccan ingredients: preserved lemons, olives, fresh coriander, saffron and the spice blends each stallholder mixes differently.

Preparation

You work at your own station. Cooked salads such as zaalouk and taktouka are prepared first, as they are served at room temperature.

Chicken with preserved lemon and olives, lamb with prunes or a vegetable tagine: the dish is agreed in advance, and vegetarian menus are easy to arrange.
